One of my favorite things to do over the weekend is to make a full pasta or quinoa recipe to enjoy for four or five meals in the upcoming week, so yesterday, I started the week off right, and made Tomato & Sausage Risotto from Smitten Kitchen. It was my second time trying the recipe, and I think I finally nailed it. It's certainly not something you should cook at 8 pm when you're starving {my big mistake last time...}, so this time around I started at 5 pm. It's slow and steady to make, but totally worth it with the sweet italian sausage, diced tomatoes and parmesan cheese, just a few of my favorite things.
